Matcha has different “color, taste and aroma” depending on the grade of tea leaves. When using it for making sweets, matcha with a high grade is not necessarily the best, depending on what you are making. High-grade matcha has a nice color, but it doesn’t have the unique bitterness of matcha, so if you use it in sweets, you may feel that the taste is lacking.
